Potato Oat Snacks
1 c potato flakes
1⅓ c hot water
⅓ cup unsweetened almond milk
1 T ground flaxseed
2 tsp onion powder
1 tsp garlic powder
½ tsp ground black cumin
½ tsp turmeric
⅛ tsp black pepper
*Like things spicy? Add: 1 tsp cayenne
1 c Old Fashioned Oatmeal (rolled oats), toasted
Preheat oven to 400F.
Mix all ingredients except oats. Let sit 5-10 minutes while you toast the oats.
Toast oatmeal by placing in a dry frying pan (NO OIL!), stirring over medium heat for about 5 minutes until golden brown. Stir often, and watch closely! Once it starts to toast, it will burn quickly!
Add toasted oats to potato mixture and mix well.
Drop very small clusters onto a parchment (or silicone mat) covered baking sheet. Bake for 20 min. (They should be crunchy!) Transfer from pan to cooling rack.
When fully cooled, place in a paper bag.
*DO NOT place in a plastic ziploc bag— they’ll get soggy!
