Crock Pot Great Northern Bean Soup
1 can chopped artichokes, rinsed & drained
2 tsp Deliciou vegan bacon seasoning
6 cups vegan Ham flavored broth
2 cups water
¼ tsp liquid smoke
1- 16 oz package dried great northern beans, rinsed
1 medium onion, diced
salt & pepper to taste
2- 15 oz cans of great northern or cannellini beans (DO NOT DRAIN!!)
The night before:
Sort & then rinse dry beans under cold water. Soak 4-8 hours.
Place rinsed and drained artichokes on paper towels to dry as much as possible. Place them in a large covered container, stir in bacon seasoning and set aside in refrigerator.
Preheat oven to 400F. Place bacon seasoned artichokes on a parchment or silicone lined baking sheet and bake for 20 minutes or until browned, stirring halfway through cooking.
While artichokes are baking, add canned beans WITH liquid to crockpot. Blend with immersible blender or mash with vegetable masher until fairly smooth.
Drain soaked dry beans and add to crockpot with onion, salt, pepper, liquid smoke, broth and bacon seasoned artichokes,
Cook on high for 6-8 hours
Ladle into bowls, serve and enjoy!
