Slow Cooker Sweet Potato Quinoa Chili
Cook time: 8 hours (low)
Makes about 8 cups
INGREDIENTS
½ c uncooked quinoa, rinsed in strainer
1 (15 oz.) can black beans, drained, rinsed & chopped with sharp knife
1 (16 oz.) can of vegetarian baked beans
1 can pinto beans, drained & rinsed
3 cups vegetable broth
1 28-oz. can diced tomatoes
1 medium onion, chopped
1 green pepper, chopped
2 sweet potatoes, chopped
1 T chili powder
2 tsp cumin
¼ tsp paprika
Salt & pepper to taste
DIRECTIONS
Place everything in a crock pot and cook on low for 6-8 hours! Enjoy!
